2 cups uncooked orzo

1 medium cucumber

20 oz. cherry tomatoes

1/2 red onion

1/4 cup pistachios

1/3 cup vegan feta

dill

1/2 cup vegan creamy dill dressing from Trader Joe’s (can substitute with equal parts cashews and water and half that amount of dill, lemon juice, and nutritional yeast - blended until smooth)

1 tsp dijon mustard

1/2 tsp black pepper

1/2 tbsp oregano

1/2 tbsp dried basil

1/4 tsp garlic powder

2 tbsp red wine vinegar

1 tbsp maple syrup

1/4 tsp onion powder
