pear pistachio cake
4 tbsp vegan butter, melted
1/4 cup granulated sugar
1/2 cup coconut sugar
2/3 cup cinnamon applesauce
1 tsp vanilla extract
1/2 cup dairy free milk
1 ½ cups all-purpose flour

½ cup almond flour
1 tsp baking powder
1/3 cup pistachio spread
1 tsp cinnamon
3 thinly sliced Bosc pears
Powdered sugar (optional)
Preheat your oven to 350°F. In a medium bowl, whisk together the vegan butter and sugar until smooth.
Stir in the applesauce, vanilla extract, and dairy-free milk until well combined. In a separate bowl, combine the all-purpose flour, almond flour, baking powder, and cinnamon.
Mix to evenly distribute, then gradually fold the dry ingredients into the wet mixture. Add the pistachio spread and mix thoroughly until the batter is smooth.
Pour the batter into an 8in. round cake pan, spreading it evenly. Arrange a single layer of sliced pears on top.
Bake for 50 minutes. Once baked, dust with powdered sugar and enjoy!
