Banana Cream Pie
Ingredients
1 graham cracker pie crust
12 oz. non-dairy whipping cream
2 tsp vanilla extract
2 bananas
3 tbsp cornstarch
12 oz. coconut milk
1/2 cup sugar
1 tsp coconut extract
Directions
Add 6 oz. coconut milk and sugar to a saucepan. Place on stove over medium heat. In a separate bowl, add 6 oz. coconut milk and cornstarch. Mix thoroughly.
Add the coconut milk and cornstarch mixture to the saucepan. Stir consistently as the mixture thickens.
Once thickened, or after 5 minutes, add 1 tsp vanilla extract and coconut extract to the saucepan. Mix well and pour over graham cracker crust. Place in the fridge for 1 hour.
Add 1 tsp vanilla extract to whipping cream. Whisk until peaks form.
Remove pie from fridge. Add sliced bananas to the top, then the whipped cream.
Serve and enjoy!
