Cherry Pomegranate Iced Coffee

Ingredients

1/2 cup cherries, pitted

1/2 oz. pomegranate juice

1/4 cup granulated sugar

2 oz. espresso

6 oz. non dairy milk

Directions

Cook cherries with ½ cup of water over medium heat for 15 minutes, stirring occasionally. Strain out the cherries, then immediately stir in sugar.

Return the mixture to medium heat and stir consistently until bubbly and thickening. Add pomegranate juice—either freshly muddled or pre-juiced—and continue stirring for another 3-5 minutes to deepen the flavor and richness.

Remove from heat and pour into a jar to stop the cooking process.

Brew your espresso and start assembling. Fill a glass with ice, then add 1.5 oz of the cherry-pomegranate syrup, followed by your favorite non-dairy milk. Top with freshly brewed espresso.

Stir with a straw to combine and chill the drink. Sip and enjoy!
