Cherry Vanilla Cheesecake

Ingredients

1 cup oats

4 pitted dates

½ tbsp cinnamon

1 ½ cup non-dairy yogurt

½ lemon

1 tbsp honey

1/4 cup cashews

1 ½ cup of cherries

2 tbsp maple syrup

1 ½ tsp vanilla extract

Directions

Combine oats, dates, cinnamon, 1 tbsp maple syrup, and 1/4 cup water in blender. Blend for 30 seconds or until all ingredients are crumbled.

Press blended mixture into a thin layered crust along the bottom of your dish. Ensure the crust is evenly dispersed and compact. Place in fridge until the filling is complete.

Blend yogurt, lemon, honey, cashews, 1 cup cherries, vanilla extract, and 1 tbsp maple syrup for 45 seconds to 1 minute.

Pour cheesecake filling over the crust. Place in freezer for 1 hour.

Cut the remainder of your cherries in half. Press halves into your cheesecake until flush with the top.

Place your cheesecake back into the freezer for another 2 hours. Serve and enjoy!
