Miso Gochugaru Cucumber Spirals

Ingredients
4 mini cucumbers
2 tbsp soy sauce
1 tbsp gochugaru chili oil
1 1/2 tbsp maple syrup
1 tsp minced garlic
1 tbsp miso paste
sesame seeds
2 tbsp honey roasted peanuts, chopped
1 tbsp golden raisins
Directions
Lay a cucumber between two chopsticks or skewers to prevent cutting all the way through. Make straight cuts across the cucumber, about 1/8 inch apart. Flip the cucumber over and make diagonal cuts on the other side.
Repeat with the remaining cucumbers.
In a small bowl, whisk together soy sauce, gochugaru chili oil, maple syrup, minced garlic, and miso paste until smooth.
Gently stretch the cut cucumbers to reveal the spiral pattern and place them in a shallow dish. Pour the sauce over the cucumbers, ensuring they are well coated. Let them marinate for 5-10 minutes.
Sprinkle sesame seeds over the cucumbers. Top with chopped honey roasted peanuts and golden raisins.
Serve immediately and enjoy as a spicy-sweet side dish or snack.
