Peanut Tofu Skewers
Yields: 4-6
Ingredients
32 oz. extra firm tofu
1 can coconut milk
2 tbsp maple syrup
1 tbsp sriracha
3 tbsp soy sauce
4 tbsp peanut butter
3 garlic cloves, minced
½ cup scallions, chopped
1/2 cup honey roasted peanuts, chopped
black sesame seeds
Directions
Cut each tofu block into 16 cubes and slide 4 pieces of tofu onto each skewer. Heat a cast iron pan over medium-high heat. Add a dash of oil and sear tofu on all sides for 3ish minutes per side until it starts to crisp.
In a small saucepan over low-medium heat, add coconut milk, maple syrup, sriracha, soy sauce, peanut butter, and garlic. Whisk until peanut butter is incorporated and the sauce begins to bubble. Lower the heat.
Pour half the sauce over the tofu and flip for a couple of minutes until all the skewers are submerged in sauce. Remove skewers from the heat and pour over the other half of the sauce.
Add chopped scallions, crushed honey roasted peanuts, and sesame seeds. Enjoy!
