apple pie stovetop oats

1/2 apple

1 tsp cinnamon

1 tsp pumpkin pie spice

1 tsp nutmeg

1 tbsp maple syrup

1/3 cup uncooked oats

non-dairy milk

1 tsp vanilla bean powder

1 tbsp nut butter of choice

In a small saucepan, add the diced apple, cinnamon, and pumpkin pie spice.

Pour in 2-3 tbsp of water to prevent sticking, and cook over medium heat for about 3-4 minutes, stirring occasionally until the apples soften and become fragrant.

Add the oats, nutmeg, vanilla bean powder, and 1 cup of non-dairy to the separate saucepan.

Cook oats for 5-7 minutes, stirring frequently, until the oats are thick and creamy.

Stir in the maple syrup to the apples and adjust sweetness to taste if desired. Once the oats are fully cooked, remove from heat and swirl in your nut butter of choice for added richness and flavor.

Scoop the oats into a bowl, top with cooked apples, and sprinkle of cinnamon. Enjoy your apple pie-inspired breakfast!
