Spiced Vanilla Poached Pear

2 bosc pears

3 cups water

2 cinnamon sticks

1.5 tbsp vanilla extract

2/3 cup coconut sugar

dairy free vanilla bean ice cream honey

1 tsp vanilla bourbon paste

Directions

In a large pot, combine water, cinnamon sticks, vanilla extract, and 1/3 cup coconut sugar. Stir to dissolve the sugar.

Submerge the peeled pears in the liquid and bring to a gentle simmer over medium heat. Cook for 30-40 minutes or until the pears are tender but still hold their shape. Turn the pears occasionally to ensure even cooking.

Once tender, remove the pears from the liquid and set them aside to cool slightly.

Strain 1 cup of the poaching liquid into a small saucepan. Add the remaining 1/3 cup coconut sugar and the vanilla bourbon paste. Bring to a boil over medium heat, then reduce to a simmer, cooking until the mixture thickens into a syrup (about 5-7 minutes).

To serve, place each pear on a plate. Drizzle the warm syrup generously over the pear.

Add a scoop of dairy-free vanilla bean ice cream on the side and finish with a drizzle of honey.

Serve immediately and enjoy the rich, warm
