Crispy Eggplant Bites

Ingredients

1 eggplant, cubed

1/3 cup all purpose flour

3 tbsp water

1 tsp garlic powder

1 tsp onion powder

1 cup breadcrumbs sweet chili sauce

Directions

Cut the eggplant into medium-sized cubes.

In a large bowl, mix flour, water, garlic powder, and onion powder to form a batter.

Add the eggplant and toss until evenly coated, or cover the bowl and shake to coat. If there's not enough batter to cover the eggplant, make a bit more as needed.

Place the eggplant in an air fryer at 425°F and cook for 15 minutes, shaking halfway through.

Serve hot with sweet chili sauce.
